Ingredients
Maple Glaze
- pure maple syrup
- whole grain mustard
- crushed red pepper flakes
- small pinch of kosher salt
Salmon
- salmon fillets (about 6 oz / 170g each), skin-on
- Black pepper, to taste
- fresh lemon juice
Instructions
- 1
Preheat oven to 400°F. Position one rack in the upper third of the oven for broiling later.
- 2
Whisk together the maple syrup, whole grain mustard, red pepper flakes, and a pinch of salt until smooth.
- 3
Pat the salmon fillets dry with paper towels and place skin-side down on a foil-lined sheet pan. Season generously with black pepper and drizzle with lemon juice.
- 4
Spread the glaze evenly over the tops of both fillets.
- 5
Bake at 400°F for 10–12 minutes, until the salmon is nearly cooked through and reads about 135°F internally.
- 6
Switch the oven to broil on high. Broil for 2–3 minutes until the glaze is caramelized and bubbling and the salmon reaches an internal temperature of 145°F. Watch closely — the glaze can burn quickly. Serve immediately.
