- fresh strawberries, tops removed (~10 large)
- fresh basil leaves
- balsamic vinegar
- plain Greek yogurt
- Dijon mustard
- (≈ ¾ tbsp) maple syrup
- garlic cloves, minced

Purée strawberries and basil together until smooth. Strain through a fine mesh sieve to remove basil fibres and strawberry seeds — you want the aroma and flavour, not the texture.

Whisk together the strawberry-basil purée, balsamic vinegar, Greek yogurt, Dijon mustard, maple syrup, garlic, salt, and black pepper until fully combined.

Taste and adjust — more balsamic for tang, maple syrup for sweetness, or a splash of water if too thick. Let sit 5 minutes before dressing the salad.
